Growing up in Australia, fish and chips were a staple at the dinner table. I have fond memories of walking to the local fish and chip shop with my dad and ordering a piping hot serving of the good stuff. Fast forward to over a decade later and I find myself on the other side of the world, far, far away from the food memories of my youth.

I started a little project which will lead to a bigger project (more on that another time!) and started working to recreate my childhood favorites. Although there are certain items that can’t be found in Florida, a lot of research, as well as trial and error, have brought me to some pretty spot-on dupes! 

Below find my version of Australian fish and chips! Enjoy and let me know how yours turn out!

Australian Fish and Chips

Ingredients:

Fish

  • 1 1/2 cups self-raising flour
  • 1 egg
  • 1 1/2 cups chilled beer (I use Fosters!)
  • salt and pepper
  • Vegetable oil for deep frying
  • 8 white fish fillets (flathead or whiting typically used if you can find it!)
  • Sea salt
  • 1 lemon

Chips

  • 4 large white potatoes (I like Russet)
  • Vegetable oil for deep frying
  • Salt and pepper

Steps:

  • Cut potatoes into wedges, making sure they aren’t too large
  • Place cut potatoes in a bowl of water and let sit for several hours
  • Remove potatoes and allow to dry on paper towels
  • Heat oil for deep frying until it is around 375 degrees
  • Carefully add chips and fry until light golden brown
  • Remove from oil and allow to cool
  • To prepare fish, place flour in a bowl and stir in egg to combine
  • Gradually whisk in beer until batter becomes smooth, then season with salt and pepper
  • Allow to rest for 30 minutes in fridge
  • While batter is resting heat oil and fry the chips for a second time, this time until dark brown and crispy
  • Remove from oil and season with salt and pepper
  • Remove batter from fridge and dip fish filets into batter until thoroughly coated
  • Drain the excess batter and deep fry until a deep golden color
  • Remove from oil and drain well
  • Place fish and chips on plate and enjoy with your favorite condiments!
